Description

A vibrant and satisfying salad combining protein-rich cottage cheese and hearty chickpeas, perfect for casual dining or festive occasions.


Ingredients

  • 1 cup cottage cheese
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cucumber, diced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or cilantro), optional


Instructions

  1. In a large mixing bowl, combine the cottage cheese and chickpeas.
  2. Add the halved cherry tomatoes, diced red onion, and cucumber to the bowl.
  3. In a separate small bowl, whisk together the olive oil and lemon juice until well combined.
