Description

Delicious and nutritious cottage cheese wraps filled with creamy cottage cheese and fresh veggies, perfect for a quick lunch or dinner.


Ingredients

  • 1 cup full-fat cottage cheese
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 4 oz cream cheese
  • 1 cup grilled chicken
  • 1 cup fresh veggies (cucumbers, bell peppers, or spinach)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cottage cheese, eggs, and cream cheese. Blend until smooth.
  3. Add grated Parmesan, garlic powder, and Italian seasoning. Mix well.
  4. If using grilled chicken, fold it in along with fresh veggies.
  5. Spoon the mixture onto preferred wraps and spread evenly.
  6. Roll tightly and place seam-side down on a baking sheet.
  7. Bake for 20-25 minutes, until tops are golden and slightly crisp.
  8. Allow to cool for a few minutes before slicing and serving.

Notes

Feel free to adjust seasoning or swap out proteins for variety. Leftovers can be stored in the refrigerator for up to three days.
