Delicious and nutritious cottage cheese wraps filled with creamy cottage cheese and fresh veggies, perfect for a quick lunch or dinner.
Ingredients
- 1 cup full-fat cottage cheese
- 3 large eggs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 4 oz cream cheese
- 1 cup grilled chicken
- 1 cup fresh veggies (cucumbers, bell peppers, or spinach)
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine cottage cheese, eggs, and cream cheese. Blend until smooth.
- Add grated Parmesan, garlic powder, and Italian seasoning. Mix well.
- If using grilled chicken, fold it in along with fresh veggies.
- Spoon the mixture onto preferred wraps and spread evenly.
- Roll tightly and place seam-side down on a baking sheet.
- Bake for 20-25 minutes, until tops are golden and slightly crisp.
- Allow to cool for a few minutes before slicing and serving.
Notes
Feel free to adjust seasoning or swap out proteins for variety. Leftovers can be stored in the refrigerator for up to three days.
