Description

A comforting slow-cooked casserole packed with beef, beans, and vegetables, perfect for family gatherings.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes (with juices)
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 2 cups shredded cheese (like cheddar or Monterey Jack)
  • Optional: fresh cilantro for garnish


Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Add the diced onion and minced garlic and sauté until softened, about 3-5 minutes.
  3. Transfer the beef mixture to the slow cooker and stir in bell peppers, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Cover the slow cooker and cook on low for 6-8 hours or on high for 4-5 hours.
  5. About 30 minutes before serving, stir in the shredded cheese, allowing it to melt into the mixture.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

Serve with cornbread or tortilla chips. Excellent with sour cream and jalapeños.
