A comforting slow-cooked casserole packed with beef, beans, and vegetables, perfect for family gatherings.
Ingredients
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 bell peppers, chopped
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes (with juices)
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 2 cups shredded cheese (like cheddar or Monterey Jack)
- Optional: fresh cilantro for garnish
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- Add the diced onion and minced garlic and sauté until softened, about 3-5 minutes.
- Transfer the beef mixture to the slow cooker and stir in bell peppers, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 4-5 hours.
- About 30 minutes before serving, stir in the shredded cheese, allowing it to melt into the mixture.
- Serve hot, garnished with fresh cilantro if desired.
Notes
Serve with cornbread or tortilla chips. Excellent with sour cream and jalapeños.
