Ingredients
- 8 ounces pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 cup black olives, sliced
- 1/2 cup Italian dressing
- 1/2 cup mozzarella cheese, cubed
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Boil the pasta according to package instructions until al dente. Drain and let it cool.
- In a large mixing bowl, combine the cooled pasta with cherry tomatoes, cucumber, bell peppers, chickpeas, black olives, and mozzarella cheese.
- Drizzle the Italian dressing over the top and toss everything together gently.
- Season with salt and pepper to your liking.
- Garnish with fresh basil before serving. Enjoy!
