Description

A nutritious and quick spinach and egg wrap, perfect for breakfast, lunch, or a light dinner.


Ingredients

  • Fresh spinach
  • Eggs
  • Cheese (your choice)
  • Tortilla wraps
  • Salt
  • Pepper
  • Olive oil (optional)


Instructions

  1. Heat a skillet over medium heat and add olive oil if desired.
  2. Whisk the eggs in a bowl, seasoning them with salt and pepper.
  3. Pour the whisked eggs into the skillet, stirring continuously until fully cooked.
  4. Add the fresh spinach and cook until wilted.
  5. Spoon the egg and spinach mixture onto a tortilla wrap, add cheese, and roll tightly.
  6. Serve immediately and enjoy!

Notes

Store leftovers in an airtight container in the fridge for up to two days or freeze the filling and assemble fresh later.
