Description

A comforting veggie bake packed with protein from cottage cheese and a vibrant mix of vegetables.


Ingredients

  • 1 cup cottage cheese (can substitute with ricotta)
  • 2 cups mixed vegetables (bell peppers, spinach, zucchini)
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for greasing the baking dish
  • Optional: fresh herbs for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the cottage cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Fold in the mixed vegetables and half of the shredded cheese.
  4. Grease a baking dish with olive oil and pour in the mixture, spreading it evenly.
  5. Top with the remaining shredded cheese.
  6. Bake in the preheated oven for about 45 minutes or until golden and set in the center.
  7. Let it cool for a few minutes before serving.

Notes

Using high-quality cottage cheese enhances the creamy texture. Feel free to pre-cook firmer vegetables for improved tenderness.
