Ingredients
- 1 cup cottage cheese (can substitute with ricotta)
- 2 cups mixed vegetables (bell peppers, spinach, zucchini)
- 2 large eggs
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- Olive oil for greasing the baking dish
- Optional: fresh herbs for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the cottage cheese, eggs, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Fold in the mixed vegetables and half of the shredded cheese.
- Grease a baking dish with olive oil and pour in the mixture, spreading it evenly.
- Top with the remaining shredded cheese.
- Bake in the preheated oven for about 45 minutes or until golden and set in the center.
- Let it cool for a few minutes before serving.
Notes
Using high-quality cottage cheese enhances the creamy texture. Feel free to pre-cook firmer vegetables for improved tenderness.
