Description

A delightful casserole featuring ground beef, vegetables, and comforting seasonings for a satisfying family meal.


Ingredients

  • 1 pound ground beef
  • 1 can diced tomatoes (with or without herbs)
  • 1 cup green beans (fresh or frozen)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (your choice)
  • 2 cups cooked rice or quinoa
  • Salt and pepper to taste
  • Optional: hot sauce or Worcestershire sauce for extra flavor


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  3. Add the diced onion and garlic, cooking until they become fragrant and the onion is translucent.
  4. Stir in the diced tomatoes, green beans, corn, and cooked rice. Season with salt and pepper (and hot sauce if desired).
  5. Transfer the mixture to a baking dish and sprinkle the shredded cheese evenly on top.
  6. Bake for about 25-30 minutes or until the cheese is melted and bubbly.

Notes

This casserole can be served with a side salad and is great for meal prep as it freezes well.
