Ingredients
- 1 pound ground beef
- 1 can diced tomatoes (with or without herbs)
- 1 cup green beans (fresh or frozen)
- 1 cup corn (fresh, frozen, or canned)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (your choice)
- 2 cups cooked rice or quinoa
- Salt and pepper to taste
- Optional: hot sauce or Worcestershire sauce for extra flavor
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the diced onion and garlic, cooking until they become fragrant and the onion is translucent.
- Stir in the diced tomatoes, green beans, corn, and cooked rice. Season with salt and pepper (and hot sauce if desired).
- Transfer the mixture to a baking dish and sprinkle the shredded cheese evenly on top.
- Bake for about 25-30 minutes or until the cheese is melted and bubbly.
Notes
