Description

A comforting and versatile casserole that brings together the goodness of ground beef, vegetables, and cheese, perfect for family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 bell peppers, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup cheddar cheese, shredded
  • Salt, to taste
  • Pepper, to taste
  • Italian seasoning, to taste
  • Optional: 1 cup cooked rice or pasta


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  3. Add chopped onions and bell peppers to the skillet and cook until softened. Incorporate minced garlic until fragrant.
  4. Stir in the canned tomatoes and mixed vegetables. Season with salt, pepper, and Italian seasoning.
  5. If using rice or pasta, mix into the beef mixture until combined.
  6. Transfer everything into a greased casserole dish and top with shredded cheddar cheese.
  7. Bake for approximately 30 minutes, or until the cheese is bubbly and golden.

Notes

For enhanced flavor, prepare this dish a day in advance and refrigerate overnight. This casserole freezes well; cool completely before storing.
