- 1 lb ground beef
- 1 onion, chopped
- 2 bell peppers, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups mixed vegetables (frozen or fresh)

- Pepper, to taste
- Italian seasoning, to taste
- Optional: 1 cup cooked rice or pasta
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add chopped onions and bell peppers to the skillet and cook until softened. Incorporate minced garlic until fragrant.
- Stir in the canned tomatoes and mixed vegetables. Season with salt, pepper, and Italian seasoning.
- If using rice or pasta, mix into the beef mixture until combined.
- Transfer everything into a greased casserole dish and top with shredded cheddar cheese.
- Bake for approximately 30 minutes, or until the cheese is bubbly and golden.
