Description

A comfort casserole featuring ground beef, fresh vegetables, and a savory crust of melted cheese.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cups mixed vegetables (fresh or frozen)
  • 2 cups diced potatoes
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper, to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the chopped onion and cook until translucent.
  4. Stir in the mixed vegetables and diced potatoes. Season with salt and pepper.
  5. Add the cream of mushroom soup, stirring until everything is evenly mixed.
  6. Transfer the mixture to a baking dish and sprinkle cheese on top.
  7. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until golden and bubbly.

Notes

Serve alongside a fresh green salad or with crusty bread. Consider adding sour cream or fresh herbs for an extra touch.
