Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cups mixed vegetables (fresh or frozen)
- 2 cups diced potatoes
- 1 can (10.5 oz) cream of mushroom soup
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and cook until translucent.
- Stir in the mixed vegetables and diced potatoes. Season with salt and pepper.
- Add the cream of mushroom soup, stirring until everything is evenly mixed.
- Transfer the mixture to a baking dish and sprinkle cheese on top.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes or until golden and bubbly.
Notes
Serve alongside a fresh green salad or with crusty bread. Consider adding sour cream or fresh herbs for an extra touch.
