Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups mixed vegetables (fresh or frozen)
- 1 can diced tomatoes (14.5 ounces)
- 1 cup beef broth
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (like cheddar or mozzarella)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and minced garlic. Cook until the onion is softened.
- Stir in the mixed vegetables, diced tomatoes (with juice), beef broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a simmer; let it cook for about 10 minutes.
- Transfer the mixture to a baking dish. Sprinkle shredded cheese on top.
- Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Notes
Substitute mixed vegetables based on preference. For added flavor, consider using smoked paprika or Worcestershire sauce. Pair with a salad or crusty bread.
