A warm, hearty casserole that combines ground beef, potatoes, and gooey cheese for a comforting meal perfect for busy weeknights.
Ingredients
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4-5 medium potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup beef broth or water
- 1/4 cup milk (optional, for creaminess)
- Fresh parsley, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the ground beef and brown it for about 5-7 minutes, breaking it apart with a spoon. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking for another 3-4 minutes until the onion is soft and translucent.
- Layer the beef mixture in the bottom of the prepared baking dish. Top with thinly-sliced potatoes and sprinkle with salt, pepper, Italian seasoning, and paprika.
- Sprinkle the shredded cheddar and grated Parmesan cheese over the beef. Pour the beef broth around the edges and drizzle the milk on top.
- Cover the casserole with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and lightly browned.
- Garnish with fresh parsley and serve hot.
Notes
This casserole can be made ahead of time. Just assemble and refrigerate before baking.
