Description

A comforting dish that combines ground beef, potatoes, and vibrant vegetables for a satisfying meal.


Ingredients

  • 1 pound ground beef
  • 2 large potatoes, diced (Yukon Gold preferred)
  • 1 onion, chopped
  • 1 bell pepper, diced (any color)
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Chopped parsley or scallions for garnish


Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in the garlic and paprika, cooking for an additional minute until fragrant.
  4. Mix in the diced potatoes and beef broth. Season with salt and pepper.
  5. Bring the mixture to a simmer, then cover and reduce the heat. Cook for about 20 minutes, or until the potatoes are tender.
  6. Taste and adjust seasoning as needed. Serve hot, garnished with parsley or scallions.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on medium-low heat or in the microwave, adding a splash of broth if it seems dry.
