Ingredients
- 1 pound ground beef
- 2 large potatoes, diced (Yukon Gold preferred)
- 1 onion, chopped
- 1 bell pepper, diced (any color)
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon paprika
- Salt and pepper, to taste
- Chopped parsley or scallions for garnish
Instructions
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in the garlic and paprika, cooking for an additional minute until fragrant.
- Mix in the diced potatoes and beef broth. Season with salt and pepper.
- Bring the mixture to a simmer, then cover and reduce the heat. Cook for about 20 minutes, or until the potatoes are tender.
- Taste and adjust seasoning as needed. Serve hot, garnished with parsley or scallions.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on medium-low heat or in the microwave, adding a splash of broth if it seems dry.
