Description

A protein-packed twist on classic hot pockets, these savory pockets are perfect for lunchboxes or quick snacks.


Ingredients

  • Whole wheat dough (store-bought or homemade)
  • Ground beef (or a plant-based alternative)
  • Shredded mozzarella cheese
  • Bell peppers, diced
  • Onion, chopped
  • Italian seasoning
  • Tomato sauce
  • Olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Sauté diced onion and bell pepper until softened.
  3. Add ground beef to the skillet, cooking until browned. Season with salt, pepper, and Italian seasoning.
  4. Stir in the tomato sauce, and let it simmer for a couple of minutes until well combined.
  5. Roll out the dough on a floured surface. Cut into squares or circles based on your preferred size.
  6. Place a spoonful of the filling on one half of each dough piece. Top with shredded mozzarella.
  7. Fold the dough over the filling and seal the edges with a fork.
  8. Place on a baking sheet and brush with olive oil.
  9. Bake for 15-20 minutes, or until they are golden brown.

Notes

Serve with marinara sauce or spicy ranch dressing. Leftovers can be stored in an airtight container for up to three days or frozen for two months.
