Description
A comforting bowl of rich and creamy loaded potato soup, made with crispy bacon and packed with flavor. Perfect for cozy dinners or gatherings.
Ingredients
- 4 medium russet potatoes, peeled and diced (about 1.5 lbs)
- 6 slices bacon, chopped
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons fresh chives, chopped
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon, but keep the rendered grease in the pot.
- Sauté the diced onion in the bacon grease until it becomes translucent (around 5 minutes), and then add the minced garlic for an additional minute until fragrant.
- Toss in the diced potatoes and pour in the chicken broth. Bring this mixture to a boil, then lower the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
- Blend the soup using an immersion blender until smooth, but leave some chunks for texture if you prefer a rustic feel. If using a regular blender, blend in batches.
- Stir in the heavy cream and gently heat through without bringing it to a boil.
- Serve hot, garnished with the crispy bacon, cheddar cheese, and fresh chives.
Notes
Feel free to substitute the chicken broth with vegetable broth or use dairy alternatives for a lighter version. Best enjoyed with warm bread.
