Description

A comforting bowl of rich and creamy loaded potato soup, made with crispy bacon and packed with flavor. Perfect for cozy dinners or gatherings.


Ingredients

  • 4 medium russet potatoes, peeled and diced (about 1.5 lbs)
  • 6 slices bacon, chopped
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh chives, chopped
  • Salt and pepper to taste


Instructions

  1. In a large pot over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Use a slotted spoon to remove the bacon, but keep the rendered grease in the pot.
  2. Sauté the diced onion in the bacon grease until it becomes translucent (around 5 minutes), and then add the minced garlic for an additional minute until fragrant.
  3. Toss in the diced potatoes and pour in the chicken broth. Bring this mixture to a boil, then lower the heat and let it simmer for about 20 minutes, or until the potatoes are tender.
  4. Blend the soup using an immersion blender until smooth, but leave some chunks for texture if you prefer a rustic feel. If using a regular blender, blend in batches.
  5. Stir in the heavy cream and gently heat through without bringing it to a boil.
  6. Serve hot, garnished with the crispy bacon, cheddar cheese, and fresh chives.

Notes

Feel free to substitute the chicken broth with vegetable broth or use dairy alternatives for a lighter version. Best enjoyed with warm bread.
