Description

A delightful meal featuring marinated chicken thighs with a sticky honey BBQ glaze, paired with creamy garlic parmesan baby potatoes.


Ingredients

  • 4 chicken thighs (bone-in, skin-on)
  • 1 cup honey BBQ sauce
  • 2 lbs baby potatoes, halved
  • 4 tablespoons olive oil
  • 4 cloves of garlic, minced
  • ½ cup grated parmesan cheese
  • Salt and black pepper (to taste)
  • Fresh parsley (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chicken thighs and honey BBQ sauce in a mixing bowl.
  3. Spread the chicken on a baking sheet, skin-side up.
  4. Toss the halved baby potatoes with olive oil, minced garlic, salt, and pepper.
  5. Arrange the potatoes around the chicken on the baking sheet.
  6. Bake for 40-45 minutes, until chicken reaches 165°F (74°C) and potatoes are fork-tender.
  7. Sprinkle the grated parmesan over the potatoes in the last 5 minutes and bake until bubbly and golden.

Notes

Feel free to use drumsticks or chicken breasts as alternatives. To lighten things up, reduce the olive oil or use a yogurt-based sauce for the potatoes.
