A delightful meal featuring marinated chicken thighs with a sticky honey BBQ glaze, paired with creamy garlic parmesan baby potatoes.
Ingredients
- 4 chicken thighs (bone-in, skin-on)
- 1 cup honey BBQ sauce
- 2 lbs baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves of garlic, minced
- ½ cup grated parmesan cheese
- Salt and black pepper (to taste)
- Fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chicken thighs and honey BBQ sauce in a mixing bowl.
- Spread the chicken on a baking sheet, skin-side up.
- Toss the halved baby potatoes with olive oil, minced garlic, salt, and pepper.
- Arrange the potatoes around the chicken on the baking sheet.
- Bake for 40-45 minutes, until chicken reaches 165°F (74°C) and potatoes are fork-tender.
- Sprinkle the grated parmesan over the potatoes in the last 5 minutes and bake until bubbly and golden.
Notes
Feel free to use drumsticks or chicken breasts as alternatives. To lighten things up, reduce the olive oil or use a yogurt-based sauce for the potatoes.
