Ingredients
- 4 chicken thighs or breasts
- 1 cup honey barbecue sauce (store-bought or homemade)
- 2 cups cooked rice (white or brown)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Optional: chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken with salt, pepper, and olive oil.
- Coat the chicken generously with honey barbecue sauce.
- Place the chicken on a baking sheet lined with parchment paper.
- Roast in the oven for 30-35 minutes, or until the internal temperature reaches 165°F (75°C).
- While the chicken is roasting, prepare the rice according to package instructions.
- Once cooked, fluff the rice and transfer to serving plates.
- Serve the roasted chicken over the rice, drizzling extra sauce on top.
- Garnish with chopped green onions if desired.
Notes
