Description

A delightful dish featuring succulent chicken smothered in a luscious honey barbecue sauce, perfect for a comforting family meal.


Ingredients

  • 4 chicken thighs or breasts
  • 1 cup honey barbecue sauce (store-bought or homemade)
  • 2 cups cooked rice (white or brown)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Optional: chopped green onions for garnish


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken with salt, pepper, and olive oil.
  3. Coat the chicken generously with honey barbecue sauce.
  4. Place the chicken on a baking sheet lined with parchment paper.
  5. Roast in the oven for 30-35 minutes, or until the internal temperature reaches 165°F (75°C).
  6. While the chicken is roasting, prepare the rice according to package instructions.
  7. Once cooked, fluff the rice and transfer to serving plates.
  8. Serve the roasted chicken over the rice, drizzling extra sauce on top.
  9. Garnish with chopped green onions if desired.

Notes

For added flavor, marinate the chicken for a couple of hours or overnight. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
