Description
Tender chicken marinated in honey and barbecue sauce, served over fluffy rice for a comforting family meal.
Ingredients
- 4 Chicken thighs or breasts, boneless and skinless
- 1/4 cup Honey
- 1/2 cup Barbecue sauce
- 2 tbsp Olive oil
- 2 cloves Garlic, minced
- 1 Onion, diced
- 1 cup Rice, uncooked (white or brown)
- 2 cups Vegetable or chicken broth
- Salt and pepper, to taste
Instructions
- In a bowl, mix honey, barbecue sauce, garlic, salt, and pepper. Add the chicken, coating it well, and let it marinate for at least 30 minutes in the refrigerator.
- Prepare the rice according to package instructions, using broth instead of water for more flavor.
- Heat olive oil in a skillet over medium-high heat. Add the diced onion and sauté until translucent.
- Remove the chicken from the marinade and sear it in the skillet until golden brown on both sides.
- Pour the remaining marinade over the chicken, reduce heat to low, and cover. Cook until the chicken reaches an internal temperature of 165°F, about 15-20 minutes.
- Serve the chicken over the cooked rice and drizzle with extra sauce if desired.
Notes
Leftovers can be kept in an airtight container in the refrigerator for up to 4 days, or frozen for about 3 months. Marinating the chicken longer enhances flavor.
