Description

Tender chicken marinated in honey and barbecue sauce, served over fluffy rice for a comforting family meal.


Ingredients

  • 4 Chicken thighs or breasts, boneless and skinless
  • 1/4 cup Honey
  • 1/2 cup Barbecue sauce
  • 2 tbsp Olive oil
  • 2 cloves Garlic, minced
  • 1 Onion, diced
  • 1 cup Rice, uncooked (white or brown)
  • 2 cups Vegetable or chicken broth
  • Salt and pepper, to taste


Instructions

  1. In a bowl, mix honey, barbecue sauce, garlic, salt, and pepper. Add the chicken, coating it well, and let it marinate for at least 30 minutes in the refrigerator.
  2. Prepare the rice according to package instructions, using broth instead of water for more flavor.
  3. Heat olive oil in a skillet over medium-high heat. Add the diced onion and sauté until translucent.
  4. Remove the chicken from the marinade and sear it in the skillet until golden brown on both sides.
  5. Pour the remaining marinade over the chicken, reduce heat to low, and cover. Cook until the chicken reaches an internal temperature of 165°F, about 15-20 minutes.
  6. Serve the chicken over the cooked rice and drizzle with extra sauce if desired.

Notes

Leftovers can be kept in an airtight container in the refrigerator for up to 4 days, or frozen for about 3 months. Marinating the chicken longer enhances flavor.
