Description

Juicy pork chops glazed in a sweet and savory honey garlic sauce, perfect for a comforting dinner.


Ingredients

  • 1 lb bone-in thin cut pork chops (about 4 chops)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 tablespoon Shaoxing wine (or dry sherry)
  • 1 teaspoon sesame oil
  • 1 1/2 tablespoons cornstarch
  • 1 1/2 tablespoons all-purpose flour
  • 2 tablespoons honey
  • 1 teaspoon light soy sauce (or soy sauce)
  • 1 teaspoon Shaoxing wine (or dry sherry)
  • 1 teaspoon lemon juice (or rice vinegar)
  • 1/2 teaspoon sesame oil
  • Pinch of white pepper
  • Pinch of black pepper
  • 2 tablespoons water
  • 1 cup vegetable oil (or other neutral oil)
  • 4 cloves garlic, minced
  • Sliced green onion and/or fried garlic (for garnish, optional)


Instructions

  1. Pound the pork chops to about 1/4” thickness, then cut them into bite-sized pieces and transfer to a medium-sized bowl.
  2. Combine all marinade ingredients except cornstarch and flour in the bowl with the pork and massage the marinade into the pork. Let marinate for 15 to 20 minutes.
  3. In a small bowl, mix together all sauce ingredients until well combined.
  4. In a heavy-bottomed skillet, heat the oil to approximately 350°F (176°C).
  5. Add cornstarch and flour to the bowl with marinated pork and toss to coat evenly.
  6. Carefully add the pork pieces to the preheated oil and fry until golden brown on both sides, about 1 to 2 minutes per side. Transfer to a plate.
  7. Turn off the heat and drain most of the oil from the skillet, leaving about 1 tablespoon. Turn the heat back on to medium, add minced garlic, and sauté until fragrant and golden, about 1 minute.
  8. Pour the prepared sauce into the skillet and cook, stirring until it reduces to a thin, syrupy consistency. Add the cooked pork back to the sauce and stir until well-coated.
  9. Transfer everything to a serving dish and garnish with sliced green onions and fried garlic, if desired.

Notes

For extra flavor, let the pork marinate for a few hours or overnight. Serve with steamed jasmine rice or roasted vegetables.
