Description

A delightful dish featuring tender chicken marinated in honey-lime sauce, served with creamy avocado rice.


Ingredients

  • 2 chicken breasts (boneless, skinless)
  • 1 avocado (ripe)
  • 1 cup jasmine rice
  • 2 tablespoons honey
  • Juice of 2 limes (fresh)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)


Instructions

  1. Begin by marinating the chicken. In a bowl, mix honey, lime juice, olive oil, salt, and pepper. Add the chicken and coat well. Let it marinate for at least 15 minutes.
  2. While the chicken is marinating, cook the jasmine rice according to package instructions. Once done, fluff it and set aside.
  3. In a separate bowl, mash the avocado and mix it with the cooked rice. Season with salt and pepper, adjusting to your taste.
  4. Heat a skillet over medium heat and cook the marinated chicken for about 7-8 minutes on each side, or until fully cooked through.
  5. Once the chicken is ready, let it rest for a few minutes, then slice it.
  6. To serve, layer the avocado rice on a plate and top it with the sliced chicken. Garnish with fresh cilantro if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to three days. For optimal taste, reheat the chicken in a skillet over low heat to preserve moisture.
