Description

Tender chicken marinated in honey and lime served over zesty avocado rice for a healthy meal prep option.


Ingredients

  • 1 pound chicken breast
  • 2 tablespoons honey
  • Juice and zest of 2 limes
  • 1 cup jasmine rice
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste
  • Olive oil, for cooking


Instructions

  1. In a bowl, whisk together honey, lime juice, and zest. Marinate chicken for at least 30 minutes.
  2. Cook jasmine rice according to package instructions.
  3. In a skillet, heat olive oil over medium heat. Cook marinated chicken until golden and fully cooked, about 6-7 minutes per side.
  4. Once rice is cooked, fluff it with a fork and gently fold in diced avocado, cilantro, salt, and pepper.
  5. Slice the cooked chicken and layer it over avocado rice.

Notes

Consider marinating the chicken overnight for maximum flavor. Feel free to experiment with different proteins or add spices for variation.
