Description

A delightful combination of marinated chicken and creamy avocado rice, packed with flavor and nutrients.


Ingredients

  • 2 large chicken breasts
  • 1/4 cup honey
  • Juice of 2 limes
  • 1 avocado, diced
  • 1 cup rice (white or brown)
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • Olive oil for cooking


Instructions

  1. In a bowl, combine honey, lime juice, salt, and pepper. Add chicken breasts, ensuring they’re fully coated. Marinate for at least 30 minutes.
  2. Cook rice according to package instructions. Once ready, mix in diced avocado and cilantro; adjust seasoning as necessary.
  3. Heat olive oil in a skillet over medium heat. Remove chicken from the marinade and cook for 6-7 minutes per side until fully cooked and juices run clear.
  4. Let the chicken rest before slicing it.
  5. Layer the avocado rice on a plate and top with sliced chicken.

Notes

For quicker cooking, use instant rice. Substitute honey with agave syrup for a different flavor. Serve warm or at room temperature.
