Ingredients
- 2 large chicken breasts
- 1/4 cup honey
- Juice of 2 limes
- 1 avocado, diced
- 1 cup rice (white or brown)
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a bowl, combine honey, lime juice, salt, and pepper. Add chicken breasts, ensuring they’re fully coated. Marinate for at least 30 minutes.
- Cook rice according to package instructions. Once ready, mix in diced avocado and cilantro; adjust seasoning as necessary.
- Heat olive oil in a skillet over medium heat. Remove chicken from the marinade and cook for 6-7 minutes per side until fully cooked and juices run clear.
- Let the chicken rest before slicing it.
- Layer the avocado rice on a plate and top with sliced chicken.
Notes
For quicker cooking, use instant rice. Substitute honey with agave syrup for a different flavor. Serve warm or at room temperature.
