Description

A delightful dish with tender chicken marinated in a honey-lime glaze paired with refreshing mango salsa, perfect for any occasion.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1/4 cup honey
  • 1/4 cup lime juice (freshly squeezed preferred)
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Optional: diced jalapeño for heat


Instructions

  1. Combine honey, lime juice, minced garlic, cumin, salt, and pepper in a bowl. Whisk until well mixed.
  2. Place chicken breasts in a resealable plastic bag or dish and pour the marinade over. Seal the bag or cover the dish and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Prepare the mango salsa by combining diced mango, red onion, cilantro, lime juice, and jalapeño (if using) in a bowl. Mix gently and set aside.
  4. Preheat your grill or a grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off.
  5. Grill the chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Use a meat thermometer; it should read at least 165°F (74°C).
  6. Let the chicken rest for a few minutes before slicing, then serve topped with mango salsa.

Notes

For added flavor, marinate chicken overnight. Use a grill pan on the stove if outdoor grilling isn’t possible.
