Description

A tropical delight featuring juicy chicken marinated in honey-lime sauce and topped with fresh mango salsa, perfect for summer barbecues or weeknight dinners.


Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup honey
  • Juice from 2 limes
  • 2 cloves garlic, minced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste
  • 1 large mango, diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced (optional)
  • 1/2 cup bell pepper, diced
  • Juice from 1 lime
  • Salt to taste


Instructions

  1. Marinate the chicken: In a bowl, combine honey, lime juice, minced garlic, salt, and pepper. Add chicken breasts, ensuring they are well-coated. Let them marinate for at least 15 minutes.
  2. Prepare the salsa: While the chicken marinates, mix mango, red onion, jalapeño (if using), bell pepper, lime juice, and salt in a separate bowl. Set aside for the flavors to meld.
  3. Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C).
  4. Serve: Once cooked, let the chicken rest for a few minutes. Slice or serve whole and top with a generous scoop of mango salsa.

Notes

This chicken pairs well with coconut rice or a fresh green salad. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
