Ingredients
- 4 pieces boneless, skinless chicken breasts
- 1/4 cup honey
- Juice from 2 limes
- 2 cloves garlic, minced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- 1 large mango, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced (optional)
- 1/2 cup bell pepper, diced
- Juice from 1 lime
- Salt to taste
Instructions
- Marinate the chicken: In a bowl, combine honey, lime juice, minced garlic, salt, and pepper. Add chicken breasts, ensuring they are well-coated. Let them marinate for at least 15 minutes.
- Prepare the salsa: While the chicken marinates, mix mango, red onion, jalapeño (if using), bell pepper, lime juice, and salt in a separate bowl. Set aside for the flavors to meld.
- Cook the chicken: Preheat your grill or skillet over medium-high heat. Cook the chicken for 6-7 minutes on each side or until it reaches an internal temperature of 165°F (75°C).
- Serve: Once cooked, let the chicken rest for a few minutes. Slice or serve whole and top with a generous scoop of mango salsa.
