Description

This dish features juicy chicken coated in a spicy hot honey glaze, balancing bold flavors and vibrant colors, perfect for any occasion.

Ingredients

  • Chicken thighs or breasts (boneless, skinless)
  • Hot honey or a spicy honey blend
  • Olive oil
  • Garlic cloves, minced
  • Soy sauce
  • Salt and pepper
  • Rice or quinoa (for serving)
  • Fresh veggies like bell peppers and broccoli (optional)

Instructions

  1. Begin by marinating the chicken in a mixture of hot honey, soy sauce, minced garlic, salt, and pepper. Allow it to soak in those flavors for at least 15 minutes.
  2. While the chicken marinates, prepare your grains according to package instructions.
  3. Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through.
  4. Remove the chicken from the pan and let it rest for a few minutes before slicing.
  5. In the same skillet, toss in your fresh veggies to stir-fry until tender-crisp.
  6. Serve the chicken sliced over a bed of rice or quinoa, topped with more hot honey if desired and the stir-fried veggies on the side.

Notes

For maximum flavor, don’t skip the marination step. Use a meat thermometer to ensure your chicken reaches an internal temperature of 165°F.
