Description
This dish features juicy chicken coated in a spicy hot honey glaze, balancing bold flavors and vibrant colors, perfect for any occasion.
Ingredients
- Chicken thighs or breasts (boneless, skinless)
- Hot honey or a spicy honey blend
- Olive oil
- Garlic cloves, minced
- Soy sauce
- Salt and pepper
- Rice or quinoa (for serving)
- Fresh veggies like bell peppers and broccoli (optional)
Instructions
- Begin by marinating the chicken in a mixture of hot honey, soy sauce, minced garlic, salt, and pepper. Allow it to soak in those flavors for at least 15 minutes.
- While the chicken marinates, prepare your grains according to package instructions.
- Heat olive oil in a skillet over medium heat. Add the marinated chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the pan and let it rest for a few minutes before slicing.
- In the same skillet, toss in your fresh veggies to stir-fry until tender-crisp.
- Serve the chicken sliced over a bed of rice or quinoa, topped with more hot honey if desired and the stir-fried veggies on the side.
Notes
For maximum flavor, don’t skip the marination step. Use a meat thermometer to ensure your chicken reaches an internal temperature of 165°F.
