Description

A comforting dish of black-eyed peas packed with nutrients and flavors, perfect for family gatherings and weeknight meals.


Ingredients

  • 1 lb Frozen Black-Eyed Peas
  • 1 Yellow Onion, diced
  • 3 cloves Garlic, minced
  • 1 Bay Leaf
  • 1 tsp Smoked Paprika
  • 1 can Diced Tomatoes (14.5 oz, undrained)
  • 4 cups Vegetable Broth
  • 1 tbsp Olive Oil
  • Salt and Black Pepper, to taste
  • 2 tbsp Fresh Parsley or Thyme, chopped


Instructions

  1. Heat the olive oil in a heavy-bottomed pot over medium heat.
  2. Sauté the diced onion until it becomes translucent and fragrant, about 3–5 minutes.
  3. Add the minced garlic and smoked paprika; cook for an additional minute.
  4. Toss in the frozen black-eyed peas and the can of diced tomatoes (do not drain).
  5. Pour in the vegetable broth to cover the peas; add the bay leaf.
  6. Bring to a boil, then reduce heat to a simmer. Partially cover pot and cook for 40–45 minutes until peas are tender.
  7. Season with salt and pepper to taste. Allow to rest for 10–15 minutes to thicken.
  8. Garnish with fresh parsley or thyme before serving.

Notes

This dish can be served over rice or alongside cornbread. Try adding hot sauce or cheese for extra flavor.
