Description
A comforting dish of black-eyed peas packed with nutrients and flavors, perfect for family gatherings and weeknight meals.
Ingredients
- 1 lb Frozen Black-Eyed Peas
- 1 Yellow Onion, diced
- 3 cloves Garlic, minced
- 1 Bay Leaf
- 1 tsp Smoked Paprika
- 1 can Diced Tomatoes (14.5 oz, undrained)
- 4 cups Vegetable Broth
- 1 tbsp Olive Oil
- Salt and Black Pepper, to taste
- 2 tbsp Fresh Parsley or Thyme, chopped
Instructions
- Heat the olive oil in a heavy-bottomed pot over medium heat.
- Sauté the diced onion until it becomes translucent and fragrant, about 3–5 minutes.
- Add the minced garlic and smoked paprika; cook for an additional minute.
- Toss in the frozen black-eyed peas and the can of diced tomatoes (do not drain).
- Pour in the vegetable broth to cover the peas; add the bay leaf.
- Bring to a boil, then reduce heat to a simmer. Partially cover pot and cook for 40–45 minutes until peas are tender.
- Season with salt and pepper to taste. Allow to rest for 10–15 minutes to thicken.
- Garnish with fresh parsley or thyme before serving.
Notes
This dish can be served over rice or alongside cornbread. Try adding hot sauce or cheese for extra flavor.
