A warm and satisfying chicken casserole that brings comfort and joy to any meal.
Ingredients
- 4 cups cooked chicken, shredded
- 1 cup frozen peas (or fresh, if preferred)
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 medium onion, chopped
- 2 cups cooked rice
- 2 cups chicken broth
- 1 can cream of chicken soup (or a homemade version)
- 1 cup cheddar cheese, shredded
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs for garnish (like parsley or thyme)
Instructions
- Preheat the oven to 350°F (175°C).
- Heat olive oil in a large skillet over medium heat. Sauté the onion, celery, and carrots until softened, about 5-7 minutes.
- Remove from heat and combine the veggies with the shredded chicken, rice, peas, chicken broth, and cream of chicken soup. Season with salt and pepper.
- Transfer the mixture into a greased casserole dish and top with shredded cheese.
- Bake uncovered for 30-40 minutes, or until the casserole is bubbly and the cheese is melted and golden brown.
- Allow to rest for a few minutes before serving.
Notes
For a creamier texture, mix in a splash of milk or sour cream. For a crispy topping, add crushed crackers or breadcrumbs before baking.
