Ingredients
- 2 pounds ground beef (80/20 fat ratio recommended)
- 1 cup plain breadcrumbs
- 1 large yellow onion, finely chopped
- 2 large eggs, lightly beaten
- 1/2 cup whole milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/4 cup ketchup (for the glaze)
- 2 tablespoons packed light brown sugar
- 1 tablespoon Dijon or yellow mustard
Instructions
- Preheat the oven to 350°F (180°C).
- In a large mixing bowl, combine the plain breadcrumbs with the whole milk. Let it rest for 5 to 10 minutes until the breadcrumbs soak up the liquid, forming a panade.
- Add the ground beef, chopped onion, beaten eggs, 2 tablespoons of ketchup, Worcestershire sauce, kosher salt, and pepper to the bowl. Mix gently until just combined.
- Shape the mixture into a rectangular loaf and place it in a loaf pan or on a foil-lined baking sheet.
- In a small bowl, whisk together the glaze ingredients: 1/4 cup ketchup, light brown sugar, and mustard until smooth.
- Spread the glaze evenly over the meatloaf.
- Bake for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 160°F (70°C).
- Remove from the oven and let it rest for at least 10 minutes before slicing. Serve warm with sides like mashed potatoes and green beans.
