Description

A comforting and flavorful meatloaf recipe that combines ground chuck and optional pork with fresh herbs for a tender, moist dish. Perfect for family dinners or gatherings.


Ingredients

  • 2 lbs ground chuck
  • 1/2 lb ground pork (optional)
  • 2 yellow onions (finely chopped)
  • 1 tbsp olive oil
  • 1/2 cup chicken stock
  • 1/2 cup ketchup
  • 1 tbsp Worcestershire sauce
  • 2 eggs
  • 3/4 cup plain breadcrumbs
  • 1 tbsp chopped fresh parsley
  • 1 tsp chopped fresh thyme
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or grease it.
  2. In a skillet over medium heat, warm the olive oil and sauté the onions for 5–7 minutes until soft.
  3. In a bowl, whisk together chicken stock, ketchup, Worcestershire sauce, and eggs.
  4. In a large bowl, mix ground chuck, optional pork, sautéed onions, parsley, thyme, breadcrumbs, and seasoning. Add the wet mixture and mix gently.
  5. Shape the mixture into a loaf and place it on the prepared baking sheet.
  6. Brush the loaf with extra ketchup or glaze.
  7. Bake for about 1 hour and 15 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let it rest for 10 minutes before slicing.
  9. Serve warm with your favorite sides.

Notes

For a twist, consider adding grated cheese or different herbs. Store leftovers in an airtight container in the fridge for up to 4 days.
