Description
A comforting and flavorful meatloaf recipe that combines ground chuck and optional pork with fresh herbs for a tender, moist dish. Perfect for family dinners or gatherings.
Ingredients
- 2 lbs ground chuck
- 1/2 lb ground pork (optional)
- 2 yellow onions (finely chopped)
- 1 tbsp olive oil
- 1/2 cup chicken stock
- 1/2 cup ketchup
- 1 tbsp Worcestershire sauce
- 2 eggs
- 3/4 cup plain breadcrumbs
- 1 tbsp chopped fresh parsley
- 1 tsp chopped fresh thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or grease it.
- In a skillet over medium heat, warm the olive oil and sauté the onions for 5–7 minutes until soft.
- In a bowl, whisk together chicken stock, ketchup, Worcestershire sauce, and eggs.
- In a large bowl, mix ground chuck, optional pork, sautéed onions, parsley, thyme, breadcrumbs, and seasoning. Add the wet mixture and mix gently.
- Shape the mixture into a loaf and place it on the prepared baking sheet.
- Brush the loaf with extra ketchup or glaze.
- Bake for about 1 hour and 15 minutes, until the internal temperature reaches 160°F (71°C).
- Let it rest for 10 minutes before slicing.
- Serve warm with your favorite sides.
Notes
For a twist, consider adding grated cheese or different herbs. Store leftovers in an airtight container in the fridge for up to 4 days.
