Description

Ingredients

  • 1 pound ground beef (or beef bacon)
  • 1 onion, diced
  • 1 bell pepper, chopped
  • 6 eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your favorite blend)
  • Salt and pepper, to taste
  • 4 cups cubed bread (day-old works best)
  • Optional: herbs or spices of your choice for added flavor


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with the onion and bell pepper. Season to taste, then drain excess fat.
  3. In a large bowl, whisk together the eggs and milk. Add salt, pepper, and any herbs or spices.
  4. Stir in the browned beef mixture and cubed bread until well combined.
  5. Pour into a greased baking dish and top with shredded cheese.
  6. Bake for 45 minutes, or until the cheese is bubbly and the casserole is set.

Notes

For extra creaminess, add a dollop of cream cheese to the egg mixture. Consider whole grain bread and low-fat cheese for a healthier version.
