Description

A warm and hearty dish of black-eyed peas, perfect for any occasion and symbolizing prosperity and good luck.


Ingredients

  • 1 cup dried black-eyed peas
  • 4 cups water or broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Optional: diced ham or bacon, spices like cayenne or paprika


Instructions

  1. Rinse the black-eyed peas to remove any dust or debris.
  2. In your Instant Pot, combine the peas, water or broth, chopped onion, minced garlic, salt, and black pepper.
  3. Secure the lid and set the pressure valve to sealing.
  4. Cook on high pressure for 10 minutes if using soaked peas, or 15 minutes for dried ones.
  5. Once cooking is complete, let the pressure release naturally for about 10 minutes before performing a quick release.
  6. If using ham or bacon, stir it in now along with any additional spices. Enjoy!

Notes

For a vegetarian option, substitute vegetable broth and omit meat. Feel free to serve over rice or with cornbread.
