Description
A delightful and wholesome black-eyed peas dish cooked in an Instant Pot, perfect for any weeknight dinner.
Ingredients
- 1 cup dry black-eyed peas
- 4 cups water or vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon cayenne pepper (optional)
- 1 bay leaf
Instructions
- Rinse the black-eyed peas under cold water, discarding any debris or damaged peas.
- In your Instant Pot, combine the rinsed peas, water or broth, onion, garlic, salt, black pepper, and bay leaf.
- Secure the lid tightly and seal the valve.
- Set the Instant Pot to cook at high pressure for 25 minutes.
- When the cooking time is up, let the pressure release naturally for about 10 minutes, then carefully release any remaining pressure.
- Open the lid, take out the bay leaf, and give everything a good stir. Serve and enjoy!
Notes
Feel free to swap the onion with shallots for a subtler flavor or use vegetable stock for a vegetarian version.
