Description

A delightful and wholesome black-eyed peas dish cooked in an Instant Pot, perfect for any weeknight dinner.


Ingredients

  • 1 cup dry black-eyed peas
  • 4 cups water or vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 1 bay leaf


Instructions

  1. Rinse the black-eyed peas under cold water, discarding any debris or damaged peas.
  2. In your Instant Pot, combine the rinsed peas, water or broth, onion, garlic, salt, black pepper, and bay leaf.
  3. Secure the lid tightly and seal the valve.
  4. Set the Instant Pot to cook at high pressure for 25 minutes.
  5. When the cooking time is up, let the pressure release naturally for about 10 minutes, then carefully release any remaining pressure.
  6. Open the lid, take out the bay leaf, and give everything a good stir. Serve and enjoy!

Notes

Feel free to swap the onion with shallots for a subtler flavor or use vegetable stock for a vegetarian version.
