A hearty and nutritious dish of black-eyed peas, perfect for New Year’s celebrations or quick weeknight dinners.
Ingredients
- 1 pound dried black-eyed peas
- 4 cups water or broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- Optional: diced ham or bacon for added flavor
Instructions
- Rinse the black-eyed peas under cold water.
- Place the rinsed peas in the Instant Pot. Add the water or broth, chopped onion, minced garlic, salt, black pepper, and smoked paprika.
- If desired, add diced ham or bacon.
- Secure the Instant Pot lid and set to manual high pressure for 15 minutes.
- Allow pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
- Open the lid, stir the dish, and serve warm.
Notes
For extra flavor, sauté the onions and garlic in the Instant Pot before adding the peas. Consider using vegetable broth for a vegetarian option.
