Description

Delicious and crispy Irish Potato Bites made from leftover mashed potatoes, corned beef, and cheese, perfect for appetizers or snacks.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup corned beef, shredded
  • 1 cup shredded cheese (cheddar or Swiss)
  • 1/2 cup green onions, chopped
  • 1/2 cup breadcrumbs
  • 1 egg
  • Salt and pepper to taste
  • Oil for frying


Instructions

  1. In a large mixing bowl, combine the mashed potatoes, corned beef, cheese, green onions, salt, and pepper. Stir until well blended.
  2. Scoop out a small portion of the mixture and roll it into a bite-sized ball.
  3. In a separate bowl, crack and beat the egg.
  4. Dip each potato ball in the egg wash, then roll it in breadcrumbs until coated evenly.
  5. Heat oil in a frying pan over medium heat.
  6. Carefully place the potato bites in the pan, frying in batches to avoid overcrowding. Cook until golden brown and crispy, about 3-4 minutes per side.
  7. Once done, remove with a slotted spoon and drain on paper towels.
  8. Serve warm as a delectable appetizer or snack.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
