Description
Delicious and crispy Irish Potato Bites made from leftover mashed potatoes, corned beef, and cheese, perfect for appetizers or snacks.
Ingredients
- 2 cups mashed potatoes
- 1 cup corned beef, shredded
- 1 cup shredded cheese (cheddar or Swiss)
- 1/2 cup green onions, chopped
- 1/2 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
- Oil for frying
Instructions
- In a large mixing bowl, combine the mashed potatoes, corned beef, cheese, green onions, salt, and pepper. Stir until well blended.
- Scoop out a small portion of the mixture and roll it into a bite-sized ball.
- In a separate bowl, crack and beat the egg.
- Dip each potato ball in the egg wash, then roll it in breadcrumbs until coated evenly.
- Heat oil in a frying pan over medium heat.
- Carefully place the potato bites in the pan, frying in batches to avoid overcrowding. Cook until golden brown and crispy, about 3-4 minutes per side.
- Once done, remove with a slotted spoon and drain on paper towels.
- Serve warm as a delectable appetizer or snack.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to three months.
