Description

A comforting dish featuring tender chicken thighs cooked slowly with cream cheese and seasonings, perfect for a cozy gathering.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp Italian herbs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 cups fresh spinach
  • Parmesan cheese for garnish


Instructions

  1. Season the chicken thighs with garlic powder, Italian herbs, salt, and pepper.
  2. Place the seasoned chicken at the bottom of the crockpot.
  3. Pour the chicken broth over the chicken, followed by the cream cheese.
  4. Cover and cook on low for approximately 4 hours, until the chicken is tender and easy to shred.
  5. Once cooked, stir in fresh spinach until wilted.
  6. Serve with a sprinkle of Parmesan cheese on top.

Notes

For a thicker sauce, consider adding a cornstarch slurry during the last hour of cooking. Adding a splash of lemon juice at the end brightens the flavors.
