Ingredients
- 4 boneless, skinless chicken thighs
- 8 oz cream cheese
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp Italian herbs
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups fresh spinach
- Parmesan cheese for garnish
Instructions
- Season the chicken thighs with garlic powder, Italian herbs, salt, and pepper.
- Place the seasoned chicken at the bottom of the crockpot.
- Pour the chicken broth over the chicken, followed by the cream cheese.
- Cover and cook on low for approximately 4 hours, until the chicken is tender and easy to shred.
- Once cooked, stir in fresh spinach until wilted.
- Serve with a sprinkle of Parmesan cheese on top.
Notes
For a thicker sauce, consider adding a cornstarch slurry during the last hour of cooking. Adding a splash of lemon juice at the end brightens the flavors.
