Description

A comforting, flavorful dish that requires minimal effort, perfect for busy weeknights or family gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley


Instructions

  1. Place the chicken breasts and halved baby potatoes into the crockpot.
  2. In a bowl, combine the grated parmesan, minced garlic, oregano, basil, salt, pepper, and olive oil. Mix until all ingredients are well incorporated.
  3. Pour the mixture evenly over the chicken and potatoes in the crockpot.
  4. Cover the crockpot and set it to cook on low for 6 hours or high for 3 hours.
  5. Once finished, sprinkle fresh parsley over the top before serving.

Notes

For extra flavor, let the chicken marinate in the garlic and cheese mixture for an hour or overnight before cooking.
