Description

A delicious and easy-to-make Garlic Parmesan Chicken cooked in a crockpot, perfect for busy weeknights or meal prep.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley


Instructions

  1. Place the chicken breasts and halved baby potatoes directly into the crockpot.
  2. In a separate bowl, whisk together the grated parmesan, minced garlic, dried oregano, dried basil, salt, black pepper, and olive oil until thoroughly combined.
  3. Pour this savory mixture over the chicken and potatoes, ensuring everything is well-coated.
  4. Cover the crockpot and cook on low for 6 hours, or on high for 3 hours if in a rush.
  5. Once done cooking, sprinkle with fresh parsley before serving.

Notes

For a richer flavor, consider browning the chicken in a skillet before placing it in the crockpot. Adding a splash of heavy cream before serving can make the sauce creamier.
