Ingredients
- 500g boneless chicken, diced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 3-4 green chilies, sliced (adjust to your spice level)
- 3 cloves garlic, minced
- 1-inch ginger, minced
- 1 bell pepper, chopped
- 2 tablespoons sweet chili sauce
- 1 tablespoon vinegar
- Spring onions for garnish
Instructions
- Combine diced chicken, soy sauce, and cornstarch in a mixing bowl. Let it marinate for about 15 minutes.
- Heat vegetable oil in a wok or heavy skillet over medium-high heat.
- Add marinated chicken and cook until browned. Remove and set aside.
- Sauté onion, green chilies, garlic, and ginger in the same pan until fragrant.
- Add bell pepper and stir-fry for another minute.
- Return chicken to the pan, add sweet chili sauce and vinegar, and mix well.
- Cook for an additional 2-3 minutes to allow flavors to meld.
- Serve hot, garnished with spring onions.
Notes
For a fresher taste, consider adding a splash of lime juice during marination. Pair with rice or noodles for a delightful meal.
