Description

A vibrant Indo-Chinese dish combining marinated chicken with spices and a sweet chili sauce, perfect for gatherings or festive occasions.


Ingredients

  • 500g boneless chicken, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 3-4 green chilies, sliced (adjust to your spice level)
  • 3 cloves garlic, minced
  • 1-inch ginger, minced
  • 1 bell pepper, chopped
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon vinegar
  • Spring onions for garnish


Instructions

  1. Combine diced chicken, soy sauce, and cornstarch in a mixing bowl. Let it marinate for about 15 minutes.
  2. Heat vegetable oil in a wok or heavy skillet over medium-high heat.
  3. Add marinated chicken and cook until browned. Remove and set aside.
  4. Sauté onion, green chilies, garlic, and ginger in the same pan until fragrant.
  5. Add bell pepper and stir-fry for another minute.
  6. Return chicken to the pan, add sweet chili sauce and vinegar, and mix well.
  7. Cook for an additional 2-3 minutes to allow flavors to meld.
  8. Serve hot, garnished with spring onions.

Notes

For a fresher taste, consider adding a splash of lime juice during marination. Pair with rice or noodles for a delightful meal.
