Ingredients
- Short pasta (rotini or penne)
- Cherry tomatoes
- Bell peppers
- Cucumbers
- Red onions
- Feta or mozzarella cheese
- Grilled chicken or beef (optional)
- Fresh parsley or basil
- Olive oil
- Red wine vinegar
- Italian seasoning
- Salt & pepper
Instructions
- Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
- Chop the vegetables into bite-sized pieces.
- Prepare the dressing by whisking together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a bowl.
- Combine all ingredients in a large serving bowl. Toss to ensure everything is evenly coated with the dressing.
- Taste and adjust seasoning if needed, then let it chill in the refrigerator for about 30 minutes.
