Description

A delightful pasta salad with seasonal vegetables, bold seasonings, and satisfying textures perfect for potlucks and picnics.


Ingredients

  • Short pasta (rotini or penne)
  • Cherry tomatoes
  • Bell peppers
  • Cucumbers
  • Red onions
  • Feta or mozzarella cheese
  • Grilled chicken or beef (optional)
  • Fresh parsley or basil
  • Olive oil
  • Red wine vinegar
  • Italian seasoning
  • Salt & pepper


Instructions

  1. Cook the pasta according to package directions until al dente. Drain and rinse under cold water.
  2. Chop the vegetables into bite-sized pieces.
  3. Prepare the dressing by whisking together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a bowl.
  4. Combine all ingredients in a large serving bowl. Toss to ensure everything is evenly coated with the dressing.
  5. Taste and adjust seasoning if needed, then let it chill in the refrigerator for about 30 minutes.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Marinating vegetables in the dressing enhances flavor.
