Ingredients
- 12 oz rotini or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell pepper, diced
- 1 small red onion, finely chopped
- 1 cup mozzarella cheese, diced or mini balls
- 1 cup olives, sliced
- ½ cup Italian dressing
- Salt and pepper to taste
- Optional: fresh basil or parsley for garnish
Instructions
- Begin by boiling water in a large pot and adding a pinch of salt. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
- While the pasta cools, prepare your vegetables. Dice the cucumber, bell pepper, and finely chop the red onion.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell pepper, red onion, mozzarella, and olives.
- Drizzle the Italian dressing over the pasta salad. Toss everything together gently until well combined. Taste and adjust the seasoning with salt and pepper as needed.
- Let the salad sit for at least 20 minutes to allow the flavors to meld.
