Description

A delightful blend of al dente pasta, fresh vegetables, and a zesty dressing, perfect for gatherings or a refreshing side dish.


Ingredients

  • 8 ounces pasta (fusilli or penne)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • 1 cucumber, seeded and diced
  • ½ cup black olives, sliced
  • ¾ cup feta cheese, crumbled (optional)
  • ⅓ cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta until al dente, following package instructions. Drain and rinse under cold water to stop the cooking process.
  2. Prepare the veggies: While the pasta cooks, chop the bell peppers, cucumber, and onion, and halve the cherry tomatoes. Set aside in a large mixing bowl.
  3. Make the dressing: In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Combine ingredients: Once the pasta has cooled, add it to the bowl of veggies. Pour the dressing over the top and toss gently to combine.
  5. Serve or chill: If you’re ready to serve, go ahead! Otherwise, cover and refrigerate for at least 30 minutes to let the flavors blend.

Notes

For an extra kick, add fresh herbs like basil or parsley. Feel free to customize with protein like grilled chicken or shrimp.
