Description

A vibrant dish that combines tender chicken with the heat of jalapeños, perfect for weeknight meals or family gatherings.

Ingredients

  • Chicken thighs
  • Onions
  • Jalapeño peppers (fresh or pickled)
  • Soy sauce
  • Honey
  • Garlic
  • Sesame seeds (for garnish)
  • Rice (to serve)

Instructions

  1. Cut the chicken thighs into bite-sized pieces.
  2. In a pan, heat a drizzle of oil over medium heat. Add the chicken pieces and cook until they are completely golden brown.
  3. Toss in the chopped onions and sliced jalapeño peppers. Sauté until the vegetables soften and become fragrant.
  4. In a small bowl, mix together soy sauce, honey, and minced garlic. Pour this mixture over the chicken and vegetables in the pan.
  5. Continue to cook for an additional 5 minutes, ensuring everything is evenly coated in the flavorful sauce.
  6. Serve the chicken over a bed of cooked rice and sprinkle sesame seeds on top for a finishing touch.

Notes

For an extra kick, leave some of the jalapeño seeds in when preparing the pepper. Marinating the chicken for even a short time (15 minutes) before cooking can intensify the flavors. Don’t skip the garnish! A sprinkle of sesame seeds adds visual appeal and a nutty flavor.
