Ingredients

  • 2 yellow peaches (pitted, sliced)
  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic (minced)
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes
  • 2 pounds boneless, skinless chicken thighs
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 1 medium jalapeño pepper (thinly sliced)


Instructions

  1. Prepare the Peach Glaze: In a medium bowl, mix together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set aside.
  2. Season the Chicken: Pat the chicken dry with paper towels. In a small bowl, combine kosher salt, black pepper, and chili powder. Rub this seasoning all over the chicken.
  3. Cook the Chicken: In a large nonstick skillet, heat the olive oil over medium heat. Add the seasoned chicken thighs. Cook for about 5 minutes, then flip the chicken, reduce heat to medium-low, and cook for an additional 5 minutes until the chicken reaches an internal temperature of 165°F. Remove from heat and tent with foil to keep warm.
  4. Sauté the Peppers and Peaches: In the same skillet, increase the heat back to medium and add the sliced jalapeño. Sauté for about 3 minutes, then add the sliced peaches and cook for another 3 minutes.
  5. Combine and Heat: Pour the peach glaze into the skillet, stirring until well-coated. Return the chicken to the skillet and let it cook for an additional 1-2 minutes until heated through.
  6. Serve warm and enjoy!

Notes

For enhanced flavor, marinate the chicken in the glaze a few hours ahead. For a vegetarian option, replace the chicken with grilled tofu.
