Ingredients
- 2 yellow peaches (pitted, sliced)
- ½ cup peach preserves
- 1 tablespoon extra virgin olive oil
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic (minced)
- ½ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon red pepper flakes
- 2 pounds boneless, skinless chicken thighs
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- 2 tablespoons extra virgin olive oil
- 1 medium jalapeño pepper (thinly sliced)
Instructions
- Prepare the Peach Glaze: In a medium bowl, mix together peach preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and red pepper flakes. Set aside.
- Season the Chicken: Pat the chicken dry with paper towels. In a small bowl, combine kosher salt, black pepper, and chili powder. Rub this seasoning all over the chicken.
- Cook the Chicken: In a large nonstick skillet, heat the olive oil over medium heat. Add the seasoned chicken thighs. Cook for about 5 minutes, then flip the chicken, reduce heat to medium-low, and cook for an additional 5 minutes until the chicken reaches an internal temperature of 165°F. Remove from heat and tent with foil to keep warm.
- Sauté the Peppers and Peaches: In the same skillet, increase the heat back to medium and add the sliced jalapeño. Sauté for about 3 minutes, then add the sliced peaches and cook for another 3 minutes.
- Combine and Heat: Pour the peach glaze into the skillet, stirring until well-coated. Return the chicken to the skillet and let it cook for an additional 1-2 minutes until heated through.
- Serve warm and enjoy!
Notes
For enhanced flavor, marinate the chicken in the glaze a few hours ahead. For a vegetarian option, replace the chicken with grilled tofu.
