Grilled chicken skewers featuring juicy peaches and a spicy kick from jalapeños, perfect for summer gatherings.
Ingredients
- 2 chicken breasts, cut into 1-inch cubes
- 2 fresh peaches, peeled and cut into wedges
- 2 jalapeños, seeded and sliced
- 2 tablespoons olive oil
- 1 tablespoon honey
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 teaspoon cumin
- Salt and pepper to taste
- Skewers, wooden or metal
Instructions
- Marinate the chicken: In a bowl, combine olive oil, honey, lime juice, minced garlic, cumin, salt, and pepper. Add the chicken cubes and toss to coat. Let marinate for at least 15 minutes.
- Prepare fruits and vegetables: While the chicken marinates, slice the peaches and jalapeños.
- Assemble skewers: Thread marinated chicken, peach wedges, and jalapeño slices alternately onto skewers.
- Preheat the grill: Heat your grill to medium-high heat, ensuring the grates are clean and oiled.
- Grill the skewers: Place the skewers on the grill for about 12-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
- Serve hot: Remove from the grill and let them rest briefly before serving.
Notes
Soak wooden skewers in water for at least 30 minutes before grilling. Substitute peaches with nectarines or pineapple for a different flavor.
