Description

Juicy chicken paired with sweet peaches and zesty jalapeños for a delightful summer dish.


Ingredients

  • 4 chicken breasts
  • 2 jalapeños, diced
  • 2 medium peaches, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • ½ cup pistachios, chopped (for crust)


Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts and let them marinate for at least 30 minutes.
  2. Prepare the topping: Mix the diced jalapeños and peaches in a bowl. Add a pinch of salt to taste.
  3. Cook the chicken: Preheat your grill or oven. Cook the marinated chicken breasts for about 20-25 minutes or until they reach an internal temperature of 165°F, ensuring they are cooked through.
  4. Add the topping: In the last 5 minutes of cooking, top the chicken with the peach and jalapeño mixture. Allow it to bake or grill until the peaches are soft and the flavors meld together.
  5. Finish with pistachios: Remove the chicken from heat and sprinkle chopped pistachios on top for a crunchy finish.

Notes
