Description

A quick and elegant baked salmon recipe that’s perfect for busy weeknights or casual family dinners.


Ingredients

  • 4 fillets of salmon
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh lemon juice
  • 2 cloves of minced garlic
  • 1 teaspoon of salt
  • 1 teaspoon of pepper
  • 2 tablespoons of fresh herbs (like dill or parsley)
  • 1 cup of vegetables for a side (such as roasted asparagus)
  • 1 cup of rice for a side


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare a baking sheet by lightly greasing it or lining it with parchment paper.
  3. In a bowl, mix olive oil, lemon juice, minced garlic, salt, and pepper.
  4. Place the salmon fillets on the baking sheet and brush the mixture over each piece.
  5. Arrange the fresh herbs on top of the fillets.
  6. Bake for 18-20 minutes, or until the salmon flakes easily with a fork. Check at 15 minutes if fillets are thinner.
  7. While it cooks, prepare your side vegetables and rice as per your favorite method.
  8. Serve hot, garnishing with more herbs if desired.

Notes

For extra flavor, consider marinating the salmon for 30 minutes prior to baking. Leftovers can be stored in an airtight container for up to 3 days.
