Description

A delightful one-pot dish that combines comfort and festivity, perfect for busy weeknights and gatherings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 1 packet taco seasoning mix
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can diced tomatoes (with or without green chilies)
  • 1 cup green chilies (diced, optional)
  • 1 cup chicken broth


Instructions

  1. In your Crock Pot, add the chicken breasts.
  2. Evenly sprinkle the ranch and taco seasoning over the chicken.
  3. Add the rinsed black beans, drained corn, diced tomatoes, and optional green chilies.
  4. Pour in the chicken broth.
  5. Cover the pot and set it to cook on low for 6–8 hours, or on high for 3–4 hours.
  6. After cooking, use two forks to shred the chicken in the pot, mixing everything well before serving.

Notes

For added flavor, marinate the chicken in seasoning for a few hours before cooking. Consider adding bell peppers or zucchini for extra nutrition.
