Ingredients
- 4 boneless, skinless chicken breasts
- 1 packet ranch seasoning mix
- 1 packet taco seasoning mix
- 1 can black beans, rinsed and drained
- 1 can corn, drained
- 1 can diced tomatoes (with or without green chilies)
- 1 cup green chilies (diced, optional)
- 1 cup chicken broth
Instructions
- In your Crock Pot, add the chicken breasts.
- Evenly sprinkle the ranch and taco seasoning over the chicken.
- Add the rinsed black beans, drained corn, diced tomatoes, and optional green chilies.
- Pour in the chicken broth.
- Cover the pot and set it to cook on low for 6–8 hours, or on high for 3–4 hours.
- After cooking, use two forks to shred the chicken in the pot, mixing everything well before serving.
Notes
For added flavor, marinate the chicken in seasoning for a few hours before cooking. Consider adding bell peppers or zucchini for extra nutrition.
