Ingredients
- 2 pounds Ground Chicken
- 1 cup Parmesan Cheese (shredded)
- 1 cup Panko Breadcrumbs
- 2 large Eggs
- 4 cloves Minced Garlic
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Parsley
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1/2 cup Whole Milk
- 2 tablespoons Unsalted Butter
- 1/4 cup Additional Parmesan
- 2 tablespoons Fresh Parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, and black pepper. Mix everything well until just combined.
- Fold in the milk gently until incorporated.
- Transfer the mixture into a greased loaf pan and shape it into a loaf form.
- Melt the butter and brush it over the top of the meatloaf, then sprinkle the additional Parmesan on top.
- Bake in the preheated oven for 25 minutes, or until fully cooked through (internal temp should reach 165°F / 75°C).
- Let it rest for a few minutes before slicing for the juiciest results.
Notes
For best results, use a meat thermometer to ensure the meatloaf is cooked properly. Letting the meatloaf rest before slicing keeps it juicy.
