A delightful and moist chicken meatloaf featuring the rich flavor of Parmesan and a medley of seasonings, perfect for family dinners or meal prep.


Ingredients

  • 2 pounds Ground Chicken
  • 1 cup Parmesan Cheese (shredded)
  • 1 cup Panko Breadcrumbs
  • 2 large Eggs
  • 4 cloves Minced Garlic
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Parsley
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 cup Whole Milk
  • 2 tablespoons Unsalted Butter
  • 1/4 cup Additional Parmesan
  • 2 tablespoons Fresh Parsley (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground chicken, Parmesan cheese, breadcrumbs, eggs, minced garlic, garlic powder, onion powder, basil, parsley, salt, and black pepper. Mix everything well until just combined.
  3. Fold in the milk gently until incorporated.
  4. Transfer the mixture into a greased loaf pan and shape it into a loaf form.
  5. Melt the butter and brush it over the top of the meatloaf, then sprinkle the additional Parmesan on top.
  6. Bake in the preheated oven for 25 minutes, or until fully cooked through (internal temp should reach 165°F / 75°C).
  7. Let it rest for a few minutes before slicing for the juiciest results.

Notes

For best results, use a meat thermometer to ensure the meatloaf is cooked properly. Letting the meatloaf rest before slicing keeps it juicy.
