Ingredients
- 1 whole chicken (about 4-5 lbs)
- 2 tbsp olive oil
- 1 tbsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- Fresh herbs (like rosemary or thyme) – optional
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the chicken by removing any giblets from the cavity and patting it dry with paper towels.
- Rub the entire skin with olive oil, then generously season with salt, pepper, garlic powder, onion powder, and paprika.
- For added flavor, place some fresh herbs inside the cavity.
- Place the chicken in a roasting pan, breast side up.
- Roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the dish rest for 10-15 minutes before carving.
Notes
For crispy skin, avoid covering the chicken while roasting. Consider marinating overnight for extra flavor. A probe thermometer is recommended for perfect doneness.
