Description

A delicious rotisserie-style chicken that is juicy and flavorful, perfect for family gatherings or quick meals.


Ingredients

  • 1 whole chicken (about 4-5 pounds)
  • 2 tablespoons olive oil (or melted butter)
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Fresh herbs (such as rosemary or thyme), optional


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and pepper.
  4. Rub the spice mixture generously over the entire chicken, including under the skin.
  5. Place chicken breast-side up in a roasting pan.
  6. Roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  7. Let rest for 10 minutes before carving.

Notes

For extra crispiness, roast on a rack and let the chicken rest before carving to retain juices.
