A delicious rotisserie-style chicken that is juicy and flavorful, perfect for family gatherings or quick meals.
Ingredients
- 1 whole chicken (about 4-5 pounds)
- 2 tablespoons olive oil (or melted butter)
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon paprika
- 1 teaspoon salt
- 1 teaspoon black pepper
- Fresh herbs (such as rosemary or thyme), optional
Instructions
- Preheat your oven to 375°F (190°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, and pepper.
- Rub the spice mixture generously over the entire chicken, including under the skin.
- Place chicken breast-side up in a roasting pan.
- Roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let rest for 10 minutes before carving.
Notes
For extra crispiness, roast on a rack and let the chicken rest before carving to retain juices.
