Description

Juicy and flavorful Japanese BBQ chicken thighs marinated in a sweet and savory glaze.


Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/4 cup soy sauce
  • 2 tablespoons mirin (or a mix of sake and sugar)
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/4 teaspoon black pepper
  • Optional: sliced green onions and sesame seeds for garnish


Instructions

  1. Prepare the marinade: In a medium bowl, whisk together soy sauce, mirin, sugar, sesame oil, garlic, ginger, and black pepper until the sugar is dissolved.
  2. Marinate the chicken: Place the chicken thighs in a resealable bag or shallow dish. Pour the marinade over the chicken, ensuring it’s evenly coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  3. Cook the chicken: Heat a grill or skillet over medium-high heat. Lightly oil the grill grates or pan. Remove the chicken from the marinade, letting excess drip off, and cook for 6-8 minutes per side, or until a meat thermometer reads 165°F (74°C).
  4. Glaze for extra flavor: Meanwhile, bring the leftover marinade to a boil in a small saucepan for 3-5 minutes until thickened. Brush this glaze over the chicken during the last couple of minutes of cooking.
  5. Serve: Transfer the chicken to a cutting board and let it rest for a few minutes. Slice and serve with sliced green onions and sesame seeds if desired.

Notes

Marinate overnight for deeper flavor. Use a meat thermometer for perfect cooking.
